Soak the dried shiitake mushrooms in water and restore them (keep the rehydrated soup). I'll wash the rice. Treat the internal organs of the Pacific saury and bake it crispy on both sides.
Boil the edamame and remove the beans from the skin (in the case of green beans, boil it and cut it into about 1 cm). Cut carrots into short julienne pieces, mushrooms, and dried shiitake mushrooms that have been restored into small pieces.
Put the washed rice in a pan, add the carrots prepared in step 2, mushrooms, quickly washed bud hijiki, kelp, grated ginger, and the saury baked in 1.
Add water to the rehydrated broth of dried shiitake mushrooms to 3 so that the total is 210cc, add rice vinegar, and cook (a rice cooker is OK).
After cooking, add the edamame from 2 to the pan and steam for 1-2 minutes, then remove the spine of the saury and remove the kelp. While loosening the Pacific saury, mix it large and roughly. (You can also chop dashi kombu and mix it in)
Serve in a bowl, sprinkle with ground sesame seeds, and it's done ♪ The owner can drip ponzu sauce etc. as it is, or if you like, please.
