An arranged version of a sweet potato soft cookie that I saw somewhere. I enjoy using the one called “bitokuchiyaki potato” from “Tsuruha”. The kombu is gagome kombu from Hakodate, and since there is no unsalted butter, “Marusei butter” is used. Oh! It's a whole Ezo recipe (^^;

Cut the sweet potatoes into slices (due to their nutritional value, you don't need to expose them to water) and cook them in the microwave. Time... until it becomes soft while watching the situation.
Add sweet chestnuts (not kanro-ni, but “peeled” type) and kelp that has been finely chopped with kitchen shears, add water intently, and heat further. 600w 2 minutes with fluffy wrap
Leave it alone with the plastic wrap on. Until there is no water injury and the rough heat is removed.
Mix it in a mess. It's easy to put it in a plastic bag and crush it with your fingers.
When it cools, add potato starch, mix further, roll and crush it flat, shape it like a oyaki, and lightly brown both sides with butter!
